I tried a low acid coffee from India once. It was good and tasty but nothing special, you know...As far as I know there are few methods of preparing low acid coffees, and the most popular one is roasting coffee beans to the darkest level possible. It won't eliminate the acidity but would simply hide it under its bitter taste.
