Hey there! Here is one of my favorite coffee cake recipes:
Ginger-Pear Coffee Cake

Ingredients
1 (.25 ounce) package active dry yeast
1/4 cup warm water (105 degrees to 115 degrees)
1 cup warm buttermilk (105 to 115 degrees F)
1/4 cup sugar
2 tablespoons butter or stick margarine, melted
1 teaspoon salt
3 cups all-purpose flour
FILLING:
1 1/2 cups diced peeled fresh pears
1/2 cup raisins
1/3 cup chopped walnuts
1 tablespoon ground cinnamon
1/2 teaspoon ground ginger
1/2 teaspoon grated lemon peel
1/4 teaspoon ground cloves
1 tablespoon butter or stick margarine, softened
1/4 cup sugar
1 egg, lightly beaten
GLAZE:
1 cup confectioners' sugar
1/4 teaspoon vanilla extract
3 teaspoons milk

Directions
In a mixing bowl, dissolve yeast in warm water. Add buttermilk, sugar, butter, salt and 1-1/2 cups flour. Beat in just until moistened. Add egg; beat for 2 minutes. Stir in enough remaining flour to form a soft dough. Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a bowl coated with nonstick cooking spray, turning once to coat top. Cover and let rise in a warm place until doubled, about 1 hour.
For filling, combine the first seven filling ingredients. Punch dough down. Turn onto a lightly floured surface. Roll into a 16-in. x 9-in. rectangle. Spread butter over dough. Sprinkle pear mixture to within 1/2 in. of edges. Sprinkle with sugar. Roll up jelly-roll style, starting with long side; pinch seems to seal. Place seam side down on a baking sheet coated with nonstick cooking spray. Pinch ends together to form a ring.
With scissors, cut from outside edge to two-thirds of the way toward center of ring at 1-in. intervals. Separate strips slightly; twist to allow filling to show. Cover and let rise in a warm place until doubled, about 50 minutes. Brush dough with egg. Bake at 375 degrees F for 20-25 minutes or until golden brown. Cool on a wire rack.
For glaze, combine confectioners' sugar, vanilla and enough milk to achieve drizzling consistency. Drizzle over ring.

I began collecting interesting recipes years ago when I had dreams of owning a bed-and-breakfast. I never met that goal but came away with flavorful recipes like this.

Ingredients

-- 1 cup sour cream
-- 1/2 cup butter or margarine
-- 1/2 cup sugar
-- 1 teaspoon salt
-- 2 eggs
-- 4 1/2 cups all-purpose flour
FILLING:
-- 2 (8 ounce) packages cream cheese, softened
-- 3/4 cup sugar
-- 1 egg
-- 1 teaspoon almond extract
-- 1/8 teaspoon salt
GLAZE:
-- 2 cups confectioners' sugar
-- 3 tablespoons milk
-- 1/2 teaspoon vanilla extract

Directions
1. In a mixing bowl, dissolve yeast in warm water. In a saucepan, heat sour cream and butter to 110 degrees F-115 degrees F. Add the sour cream mixture, sugar, salt and eggs to yeast mixture; mix well. Gradually add flour; mix well. Do not knead. Cover and refrigerate for 2 hours.
2.In a mixing bowl, beat filling ingredients until smooth. Set aside. Turn dough onto a lightly floured surface; divide into four pieces. Roll each into a 12-in. x 8-in. rectangle. Spread filling to within 1/2 in. of edges. Roll up, jelly-roll style, starting with a long side; pinch seam to seal and tuck ends under. Place, seam side down, on two greased baking sheets. With a sharp knife, make deep slashes across the top of each loaf. Cover and let rise in a warm place until doubled, about 1 hour. Bake at 375 degrees F for 20-25 minutes or until golden brown. Remove from pans to wire racks. Combine glaze ingredients; drizzle over warm loaves. Cool. Refrigerate leftovers.

HI Jane01! I don't think they can bake it, I guess they like the result the most and not the procedure instead :YMDEVIL:
But joking apart - I strongly believe you're able to prepare those dishes, just give it a try ;)

Coffee Cake presented by Oak Tree Lodge
Ingredients:
2 cups flour
1 tsp salt
2 tsps baking powder
2 eggs
1/2 cup vegetable oil
1 cup sugar
2 tsps cinnamon
1 cup chopped nuts

Place flour, salt, baking powder, sugar, cinnamon, and nuts in a bowl. Mix with a wooden spoon. Add eggs and oil, mix again. Pat mixture into a 9" x 13" glass greased baking dish. Turn on oven to 350 degrees.

Topping-
1 (8 oz) package of cream cheese, softened
1/3 cup sugar
1 beaten egg
dash salt
1 tsp vanilla
1 can pie filling, cherry or blueberry

Combine all ingredients except pie filling and mix with mixer. Spread topping over flour mixture.
Bake in 350 degree oven approximately 1 hour.
Warm pie filling in microwave and after cutting coffee cake, top with pie filling before serving. Or, if you prefer, pie filling can be placed on coffee cake prior ro baking.

Mocha Ice Cream Cake
Coffee ice cream, a chocolate-cookie crust and chocolate-covered coffee beans add up to a terrific party dessert. Begin making the cake one day before serving.

Ingredients:
-- 26 chocolate wafer cookies (about 6 ounces), broken into pieces
-- 3 tablespoons unsalted butter, melted
-- 2 quarts coffee ice cream, slightly softened
-- 1/3 cup chocolate-covered coffee beans
-- 2 1/4 cups chilled whipping cream
-- 1/2 teaspoon vanilla extract
-- 1 cup plus 2 tablespoons powdered sugar
-- 1/2 cup plus 1 tablespoon unsweetened cocoa powder
-- Milk chocolate shavings

Preparation:
** Blend cookies in processor until finely ground. Add melted butter; process until crumbs are moistened. Press crumb mixture onto bottom of 9-inch-diameter springform pan with 2 3/4-inch-high sides. Freeze until firm, about 10 minutes.

** Place ice cream in large bowl. Finely chop coffee beans in processor. Add to bowl with ice cream; stir until well blended. Transfer ice cream mixture to crust-lined pan. Smooth top. Cover with plastic wrap. Freeze overnight.

** Combine whipping cream and vanilla in another large bowl. Sift powdered sugar and cocoa over. Using electric mixer, beat until soft peaks form. Spread mixture over top of cake. Freeze until cream is set, at least 1 hour. (Can be made 2 days ahead. Cover; keep frozen.) Sprinkle chocolate shavings over top of cake. Run knife between pan sides and cake to loosen. Remove pan sides. Using small metal spatula or knife, smooth cake sides. Let cake stand at cool room temperature 10 minutes before serving.

Kendal Mint Cake

1 lb sugar (can be white or brown)
1/4 pint milk
1/2 to 1 teaspoonful peppermint essence OR a few drops of peppermint oil.

Dissolve the sugar in the milk using a heavy pan over a low heat. Bring to the boil, stirring constantly, and cook until a little of the mixture dropped into cold water forms a soft ball when rolled between index finger and thumb. (237 degrees F/ 114 degrees C.) Remove from the heat and add the flavourings and stir until thick. Pour on to an oiled, shallow tray and mark into bars. Cut when cold. To me the resulting sweet is more like tablet in texture, grainy and creamy. Yummy.

Sweet Potato Coffee Cake (serves 12)

Ingredients:
2/3 cup nonfat yogurt (or applesauce, originally melted butter)
3/4 cup granulated sugar
2 large eggs
2 teaspoons vanilla (original called for 1 tsp)
1 cup nonfat sour cream
3/4 cup cooked mashed sweet potatoes (I increase this to 1 C and increase the flour by about 2 T. Also have stirred in 1/2 C small chunks )
1 cup all-purpose flour
1/2 cup quick-cooking oat
1/2 cup whole wheat flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt

Topping
1 cup chopped pecans
1/2 cup light brown sugar, firmly packed
1/2 cup all-purpose flour (I add 1/4 C oats and decrease flour to 1/4 C)
1 tablespoon butter (original calls for 3 T)
2 teaspoons vanilla

Directions:
1 Heat oven to 325°.
2 Grease a 9 to 10-inch springform pan .
3 In mixing bowl, combine butter, sugar, eggs, and vanilla; add sour cream and mashed sweet potatoes.
4 In large mixing bowl, combine flour, baking powder, baking soda and salt. Stir first mixture into the flour mixture, stirring just until blended (if using additional sweet potato chunks add now).
5 Spread batter in prepared pan. Combine topping ingredients until crumbly and sprinkle over the batter.
6 Bake coffee cake for about 1 hour to 1 hour and 10 minutes, or until a wooden toothpick inserted near center comes out clean (I baked at 350 for 45 minutes and it was perfect). Let cool, loosen edges, and remove sides of pan.

All of these recipes look delicious. I am going to have to see which one I want to try first. I am a fan of coffee cake with cream cheese in it. There is nothing better than coffee cake in the morning, except coffee. ~o)

Coffee cakes - sounds and looks delicious!

Found something special while surfing the Web, the explanation was so clear and the pictures were awesome, the cake itself was tasty, I'm sure :d

Ingredients
FOR THE CAKE:
1-1/2 stick Butter, Softened
2 cups Scant Sugar
3 cups Flour, Sifted
4 teaspoons Baking Powder
1 teaspoon Salt
1-1/4 cup Whole Milk
3 whole Egg Whites, Beaten Until Stiff

FOR THE TOPPING:
1-1/2 stick Butter, Softened
3/4 cups Flour
1-1/2 cup Brown Sugar
2 Tablespoons Cinnamon
1-1/2 cup Pecans, Chopped
Preparation Instructions

Preheat oven to 350 degrees. Sift together flour, baking powder, and salt. Beat egg whites and set aside.

Cream butter and sugar. Add flour mixture and milk alternately until combined. Don't overbeat. Fold in beaten egg whites with a rubber spatula. Spread in a well-greased 9 x 13 (or LARGER!) baking pan. A cake pan with higher sides would be best.

In a separate bowl, combine topping ingredients with a pastry cutter until crumbly. Sprinkle all over the top.

Bake for 40 to 45 minutes, or until no longer jiggly. Serve warm---delicious!
