Brazilian Coffee Biscuits
Ingredients:
150g (5 oz) butter
100g (4 oz) dark brown soft sugar
100g (4 oz) caster sugar
1 egg
1 1/2 teaspoons vanilla extract
1 tablespoon semi-skimmed milk
250g (9 oz) plain flour
1/2 teaspoon salt
1/4 teaspoon bicarbonate of soda
1/4 teaspoon baking powder
2 tablespoons instant coffee powder

Preparation method:
1.Preheat oven to 200 C / Gas mark 6. Line baking trays with baking parchment.
2. Beat the butter, brown sugar, caster sugar, egg, vanilla and milk until fluffy.
3. In a separate bowl, mix the flour, salt, bicarbonate of soda, baking powder and instant coffee. Add to sugar mixture and mix thoroughly.
4. Shape dough in 2cm (1 in) balls. If it's too soft to shape, chill it for a while. Place balls 5cm (2 in) apart on prepared baking trays. Flatten to 1cm (1/2 in) thickness with fork or glass dipped in sugar.
5. Bake in preheated oven for 8 to 10 minutes until lightly browned.

Note:
If you don't have powdered instant coffee, use a pestle and mortar to make a powder out of instant coffee granules.

Mmmm... it's finger-licking good!..

Coffee Choc Chip Biscuits Delicious - you will not be able to stop at one.
Preparation time: 15 minutes.
Ingredients
125 g butter
½ cup caster sugar
½ cup brown sugar, firmly packed
1 tablespoon instant coffee
1 egg
1¾ cups self-raising flour
1 cup choc bits
Method
Preheat oven to 180°C
Cream butter and sugars. Beat in coffee, then egg.
Stir in flour and choc chip bits until mixed.
Drop spoonfuls of mixture on to greased baking tray and bake for 10-15 minutes.
Allow to cool on tray.
Recipe notes For those who love a caffeine fix, these are perfect.

Fabulous Coffee Biscuits Recipe (Cookies for grown-ups)

Ingredients:
1 cup sorghum flour
1 cup buckwheat flour or millet flour
1/2 cup tapioca or potato starch
1 1/2 teaspoons xanthan gum
1 1/2 teaspoons baking soda
1 teaspoon sea salt
3/4 cup Spectrum Organic Shortening
1/3 cup hot vanilla hemp milk or coconut milk with 2 rounded tablespoons instant coffee added + pinch stevia sweetener
1 cup organic light brown sugar, packed
1/2 cup organic white cane sugar
1 tablespoon bourbon vanilla
1 tablespoon honey (or agave nectar to keep it vegan)*
1 tablespoon Ener-G Egg Replacer whisked with 1/4 cup warm water (or 2 beaten eggs)
6 - 8 oz. dark chocolate chips

You're going to chill the dough for an hour so don't preheat the oven quite yet.

In a large mixing bowl whisk together the flours, tapioca starch, xanthan gum, baking soda and sea salt.

In a separate bowl, beat the Spectrum shortening, coffee milk, brown and white sugar, vanilla, honey/agave and the prepared egg replacer (or beaten eggs).

Add the dry ingredients a little at a time and beat to combine- until a dough forms. This dough was stickier- for us- than our usual cookie dough, so we added a tablespoon of sorghum flour to bring it to a soft slightly sticky (but not wet) dough. Judge for yourself- if the dough needs more flour, add a tablespoon at a time until it appears as soft, slightly sticky but not wet.

Add the chocolate chips and any additional add-ins and beat by hand.

Cover and chill the dough for an hour.

Coffee and Cocoa - Mocha Biscuits

Ingredients:
1/2 lb butter
1 teaspoon instant coffee
2 1/2 cups flour
2 teaspoons baking powder
5 ounces sugar
2 ounces cocoa powder
1 pinch salt

Directions:
1 Cream butter and sugar together really well in a bowl.
2 Sift dry ingredients together in another bowl.
3 Add sifted dry ingredients
4 Add 2 tbsp warm coffee.
5 Knead well and then form into balls.
6 Bake in a moderate oven.
7 Remove from oven.
8 Allow to cool completely before serving.
I don't have a problem with caffeine. I have a problem without caffeine!

Ok, let's come to an agreement - if ever post a recipe, let's include an image of that recipe as well. I know for myself that I cannot like or dislike something (food/drink) unless I see how it looks. Deal?
Coffee Cookies
Ingredients
1/2 cup shortening
1 egg
2 tablespoons instant coffee powder
2/3 cup white sugar
1/2 cup chopped walnuts
1/2 teaspoon vanilla extract
3/4 cup all-purpose flour
Directions
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a medium bowl, cream together the shortening, sugar and coffee. Beat in the egg, flour, vanilla and chopped nuts. Mix until well blended. Drop by teaspoonfuls onto cookie sheets
Bake for 10 to 12 minutes in the preheated oven, or until edges are golden. Let cool on wire racks.

Recipe of Coffee biscuit delight.[/b]

[b]Ingredient

butter 2 lbs
Instant coffee powder 0.5 lbs
Parle G biscuits 3 lbs
Sugar powder 2 lbs

Directions
Mix butter coffee powder(3/4th) and required amount of sugar.
Make a hot cup of black coffee with the remaining coffee powder.
Dip the biscuit in the decoction and arrange in a layer one next to the other like a puzzle.
Apply the butter coffee micture coating the biscuits evenly on all sides now put another layer of biscuits dipped in the coffee. (Dipping time should be quick).
Now apply the butter mixture again, continue untill desired.
Decorate as desired and place it int he fridge for 2 hours, cut into small pieces and serve cold

Use the ingredients as per individual taste
Coffee Should be Black as Hell, Strong as Death, and Sweet as Love
