Perfect roast....

...is the one I like, IMHO ;) I roast my coffee beans exactly till the moment my nose perceives the right aroma. I stop my roaster and then start grinding them. I don't follow any rules, I am just an attentive listener to my sense organs. If you brew your coffee at home, all depedns on your personal taste and not the one advised from TV or any other sources. Follow your wishes :-)

Right to the point, Peter! I like mildly roasted beans - when they are roasted enough for emitting all the aroma and flavor they are capable at. I don't like them overroasted as they lose their natural fragrance and gain a lot of harmful acidity

I like barely roasted beans so that they don't lose their initial qualities meanwhile the roasting gives them another perfect nuances. This mix makes me crazy :d
