That sounds really great. I think I might try it and I think I'll change it up a bit too. I love caramel so I will add caramel and see how it turns out. Thanks for the awesome recipe.

Oh now I'm in heaven! My favorite ice cream is Chocolate Mint Chip so this is right up my alley. I'm going to go buy the necessary items after work today! I can't wait for the refreshing feeling while sipping on this!

CAFE DON JUAN

~o) 1 cup of strong, hot coffee (Espresso works well)
~o) sugar
~o) 1 oz. dark rum
~o) 1 oz. Kahlua
~o) whipped cream

Moisten the top edge of a coffee cup with a little rum. Place a little sugar on a dish, and dip the cup into the sugar to coat rim. Add the rum and the Kahlua, and mix together. Add the hot coffee, and stir quickly to mix. Top with whipped cream. The whipped cream prevents the alcohol from escaping.

I have got to try the chocolate mint one. I love the thin mint Girl Scout cookies and that is what it reminded me of. I will get the ingredients the next time I go to the store and let you know how it turns out!
